1.   Tandoori Paneer Tikka

Ingredients for Preparation

To Marinate

  1. Take hung curd or Yoghurt about 1 cup
  2. Red chilli powder – 1 tablespoon
  3. Ginger garlic paste – 1 tablespoon
  4. Lemon Juice – 1 to 2 tablespoon
  5. Tandoori masala – ½ tablespoon
  6. Turmeric powder, Cumin powder, and coriander powder – ½ teaspoon
  7. Oil – ½ teaspoon
  8. Salt as per taste
  9. Fresh mint leaves and coriander – ¼ cup

For Garnish

  1. 1 Thin round sliced onion
  2. 1 Lemon – wedge cut
  3. Chaat masala

Cooking Directions

  1. Take a bowl and mix all the items under the head of Marinate one by one, add the paneer cubes and mix it so as they get entirely coated with curd. Once it is done, please remove them and take them aside.
  2. Now, add cubed veggies to the remaining marinade, and mix it well to get coated with curd.
  3. Wrap the bowl with the plastic, for about one hour put the bowl in the fridge.
  4. Thread the paneer and veggies alternatively on a wooden or metal stick.
  5. Grill the paneer on a gas grill/coal grill or in an oven till its color become brown.
  6. If you are not using any grill or oven, you can fry them in a pan with ½ teaspoon of oil.
  7. Serve the delicious Paneer Tikka with grilled veggies, some tomato slices, onion rings, and a squeeze of lemon. Add Chaat masala as per taste.

2.   Chicken Korma

Ingredients for Preparation

To Marinate:

  1. Clean and well-chopped chicken – ½ kg
  2. Red chilli powder – as per taste
  3. Turmeric powder – ½ teaspoon
  4. Yogurt – 1 cup
  5. Salt – as per tastes

To Grind:

  1. Ginger – 1 inch approx.
  2. Cinnamon Stick – 1 cm
  3. 4 Cloves
  4. One cardamom
  5. Desiccated coconut – 1 tablespoon
  6. Four green chillies
  7. Few almonds and cashews
  8. ¼ cup of water as required to grind.

To season:

  1. Oil – 2 tablespoon
  2. Cinnamon Stick – 1 cm
  3. 3 Cloves
  4. One cardamom

Other ingredients:

  1. 1 Finely chopped onion
  2. 1 Roughly chopped tomato
  3. Curry leaves & Garam masala – ½ teaspoon

Cooking Directions

  1. Marinate the chicken with all the ingredients of the list of “To marinate” and keep it aside for about 20 mins
  2. Prepare a fine paste by grinding all the ingredients under the head of “To grind” in an electric blender.
  3. Initially, make it in dry powder form, gradually add hot water, let it soak for a minute, and make it a fine paste.
  4. Now, heat the oil in a pressure pan at medium temperature.
  5. Season it well with ingredients listed under “To season.” Stir it for few seconds until you can smell the aroma.
  6. Add chopped onions and sauté till they turn slightly brown.
  7. Then add chopped tomatoes.
  8. Now add marinated chicken and for nearly 2 minutes sauté it.
  9. Add that ground masala paste and remaining chilli powder and turmeric powder under the head of “other ingredients.”
  10. Fry it until the smell goes off.
  11. Add water till the chicken immerses and manage the gravy thickness as per your need.
  12. Close the lid of the pressure pan and cook over medium temperature for nearly three whistles
  13. Open it once pressure air is removed and add garam masala with garnishing of coriander.

3.   Orange glazed cranberry bread

Ingredients for Preparation

Bread:

  1. All-purpose flour or Maida – 2 1/3 cups
  2. White granulated sugar – 2/3 cup
  3. Baking powder – 3 teaspoon
  4. Salt & Zest of one orange or lemon
  5. Unsalted butter – 4 tablespoons
  6. 1 teaspoon pure vanilla extract
  7. Orange juice about ½ cup
  8. Milk – 1 cup
  9. Walnuts – ½ cup

Glaze:

  1. Confectioners’ sugar – 1 cup
  2. Orange juice – 2 tablespoon

Cooking Directions

  1. Pre-Heat the oven at 350°F. Take a loaf pan and butter it.
  2. Take a large bowl and add up all the dry ingredients for making bread.
  3. Add chopped cranberries, nuts, and orange zest and stir the mixture.
  4. In another separate bowl, add the wet ingredients such as melted butter, vanilla extract, orange juice, and milk, beaten egg.
  5. Mix the wet ingredients into dry, take a greased pan and pour them.
  6. Bake it for about 45 minutes.
  7. Take the cake from the oven, place it on the cool platform, and glaze it with orange juice to the powder sugar and mix it well.
  8. Bingo – Slice it and serve.
