Description:
Sago Filled Jacket Potatoes
Preparation:
1) Wash Sabudana(Sago)in running Water and soak in 1/2 cup of water for approx. 3hrs. or until visibly separate and soaked.
2) Microwave for 1 min.adding 1tblsp. Oil and Salt.
3) Grate Dry Coconut.
4) Finely Chop Coriander Leaves and Green Chilies.
Cooking:
1) Mix well 1/2 Amchur Powder, 1cup water, 1tsp. Red chilli Powder, 6tblsp.Sugar and Salt in a wok.
2) Heat and stir continuously till it becomes thick like jam. Keep it aside.
3) Wash medium size Potatoes with skin and pierce with fork all over.
4) Keep in microwave for 25 mins., should not be too soft.
5) Cut Potatoes into two halves.
6) Leaving Potato layer to the skin about 1cm. Scoop out the potato flash.
7) Mix Butter, Salt & Black Pepper Powder well.
8) Brush this Butter inside & outside potatoes.
9) Return to microwave for 4mins. and keep aside to cool.
10) Meanwhile separate Sabudana with hands. Mix well Sabudana, half of scooped potato flash, chopped Green Chilies & Coriander Leaves,Salt, Black Pepper Powder, Cumin Powder, 1/2cup Grated Coconut and 3TBLSP. AMCHUR CHUTNEY altogether.
11)Stuff this mixture into potato skins(jackets) and again keep it in microwave for 1min.
Serve For: 4 Persons
Total cooking time: 40-50 mins.
Garnishing:
Sprinkle grated coconut and serve hot with coffee.
