1.   Winter Squash Lasagna with Brown Butter Béchamel

Ingredients for Preparation

  1. Get around 4lbs. of peeled, seeded butternut squash

Cooking Directions

  1. Preheat the oven at 450 degrees F. In a large bowl, toss the squash slices with oil, nutmeg and 1/4 teaspoon of salt, cinnamon powder; place the squash on two large rimmed baking sheets in one layer.
  2. Roast for 40 minutes or before tender, halfway through the racks. Reset the oven to 375 degrees F.
  3. Meanwhile, Take a 4-quarter saucepan and heat butter for 6 to 8 minutes or until browned and fragrant, mixing regularly. Stir in flour. Reduce heat to medium-low heat. Cook for 1 minute, stirring.
  4. Gradually whisk in the milk until it is smooth. Add garlic and sauerkraut. Heat to simmering on high, stirring continuously. Reduce heat; boil for 5 minutes or until thickened, stirring. Stir in pecorino and 3/4 teaspoon of salt. Remove the heat.
  5. At the bottom of the greased 3-quart baking dish, place 3 or 4 noodles in a single sheet, breaking to match if necessary; cover with 1/3 of the squash.
  6. Spread 1/3 of the cream sauce over the squash and finish with 1/3 of the mozzarella. Repeat the layering two times. Top securely with foil. Bake for 50 minutes. Take off the foil.
  7. Bake uncovered for 10 to 20 minutes or until the surface is crispy and the pasta is soft. Boil it on High temperature for about 2 minutes.
  8. Let stand at least ten minutes before eating. Garnish with hazelnuts and leaves of sage.

2.   Butter Chicken

Butter chicken is a traditional and tasty dish in Indian cuisine, where tandoori chicken is fried in rich, creamy sauce-based tomatoes.

Ingredients for Preparation

To sauté and puree:

  1. 2 Tablespoon of Oil or Butter
  2. 1-inch cinnamon
  3. 3-4 cloves
  4. 2-3 cardamoms
  5. Two diced medium-sized onions
  6. 3-4 diced tomatoes
  7. Two green chillies which should be chopped in two half’s
  8. 1 Tablespoon of ginger garlic paste
  9. Two teaspoons of red chilli and coriander powder
  10. One teaspoon of cumin powder
  11. 1/4  teaspoon of turmeric powder
  12. 6 to 10 cashews

To prepare gravy:

  1. Butter – 1 tablespoon
  2. Two cooked chicken
  3. 1/2 cup fresh cream
  4. One teaspoon of honey or sugar
  5. Salt according to taste
  6. 1/2 teaspoon garam masala

Cooking Directions

  1. Heat oil (or oil and butter) in a skillet over medium heat and add cinnamon, cloves, cardamom and mace. Sauté until you’ve got a good smell.
  2. Attach the sliced onions and sauté until translucent. Now add the tomatoes and simmer in medium heat until soft and the pulp is light red.
  3. Connect the ginger garlic paste and sauté for 2 minutes.
  4. Add the turmeric and cumin powder, coriander and red chilli powder, cashews. Mix it and turn off the heat for a minute.
  5. When the liquid has cooled down, purée it.
  6. Take a saucepan, heat the butter
  7. Strain the tomato puree straight into the butter mixture and blend properly. Strip the purée from the tomato.
  8. Sauté on medium temperature for about 3 to 4 minutes before the natural scent fades from the gravy.
  9. Insert the cooked tandoori chicken parts to the sauce. Let it cook for 4-5 minutes.
  10. Change the water consistency to meet your needs and get it to a boil.
  11. Connect milk, garam masala, sugar or honey and simmer for one minute.
  12. Turn the heat off and move it to the serving dish.
  13. Garnish it and serve with any kind of Indian bread (Naan, Paratha or Roti).

3.   Vanilla Roasted Potatoes
